Healthy Anzac Biscuits

Anzac Day (25 April) is the day we remember and honour all the service men and women who sacrificed their today for our tomorrows. Anzac biscuits have become a popular tradition for us kiwis, as these were known to be sent to soldiers abroad during the war thanks to their long shelf life.

 

I love baking Anzac biscuits for the whole family, especially my healthier version! They’re full of oats, which are incredibly nutritious and rich in fibre, protein, vitamins, minerals and antioxidants.

The Recipe!

Ingredients

  • 125gm butter or coconut oil
  • 2 x T maple syrup
  • 1/2 x cup coconut sugar
  • 1 x t vanilla
  • 1 x cup rolled oats
  • 1 x cup coconut
  • 1/2 x cup GF flour – or normal flour
  • 3/4 x cup ground almonds
  • 1/2 x t baking soda

Method

  1. Melt butter, maple syrup, coconut sugar & vanilla
  2. Leave the mixture to cool slightly
  3. Heat oven to 180 degrees celsius
  4. Mix in all dry ingredients
  5. Line a baking try & roll mixture into balls
    * no need to press balls down as they cook they will spread
  6. Bake 15mins or until golden
  7. Leave cool on tray or wire rack

    Makes approx 20
    * I topped mine with melted @whittakersnz chocolate
