Nothing beats a salad like this. Chicken, bacon and eggs with the worlds best creamy salad! It’s hard to find a salad dressing that isnt full of calories. This cashew creamy goodness is the bees knees and my go to for looooads of salads!

The Recipe!
Caesar Salad Ingredients
- 2 x eggs
- 2 x chicken thighs
- Coconut oil for frying
- 1 x cup cos lettuce
- 2 x rashers bacon
- 4 x anchovies (optional)
Ceasar Salad Method
- Wash lettuce & place on serving plate
- Add eggs to water, bring to boil 6mins & peel
- Chop & fry chicken until cooked
- Chop & fry bacon until brown
- Add meat to lettuce, then eggs & anchovies (if you dare)
- Pour over dressing & serve
Homemade Cashew Creamy Dressing Ingredients
- 1/2 x cup cashews (soaked in boiling water 30mins)
- 1/2 x cup almond milk
- 2 x T capers
- 2 x T cider vinegar
- 2 x clove garlic (crushed)
- Salt & pepper

- Drain water from cashews
- Add everything to nutribullet & blend for few minutes until creamy
